INTERNAL TEMPERATURE GUIDE
BEEF: 
Rare140ºF, Medium160ºF, Well Done170ºF
HAM: Fully Cooked 140-160ºF
PORK-VEAL-TURKEY-CHICKEN BREAST: 170ºF
LAMB: 177ºF 
WHOLE CHICKEN OR TURKEY: 185ºF

Insert instant read thermometer into thickest meat area
Do not touch bone with the thermometer
For tips on keeping white and dark poultry meat tender
     see recipes. 

Let meat rest 20 minutes before carving to let the juices
     settle.
