Banana Chocolate Mini's

 75 CaloriesMini's are my new favorite thing. A mini muffin
is 75 Calories as opposed to 360 Calories for a slice of 
Banana Bread and they're just as satisfying. 
These are a great snack or breakfast on the go.

Mini Bundt Pan or Mini Muffin Tin
Measuring Cup
Measuring Spoon
Large Mixing Bowl
Medium Mixing Bowl,
Rubber Spatula
Wire Whisk
Wooden Spoon
Potato Masher


1/3 Cup Honey
1 CUP Almond Milk
3 Bananas, Very Ripe, masked (1 ½ Cups)
2 TBS Veg Oil or Non Dairy Butter melted
2 large Eggs
1 tsp Vanilla Extract

2 Cups Gluten Free Baking Flour
1 TBS Baking Soda
1 teaspoon Salt
1 CUP Dark Semi-Sweet Chocolate Chips


1.Place the oven rack on the middle, preheat oven to 375ºF degrees: Melt the non-dairy butter, if using and let it cool.

2. Generously spray a mini bundt pan with butter flavored vegetable spray or line muffin or mini muffin tins with paper liners.

3. In a large bowl whisk the flour, sugar, baking soda, and salt together. Add the chocolate chips and whisk until they're dusted with flour.

4. Mash the bananas with a potato masher. Add the cooled melted butter or oil, eggs and vanilla and whisk together.

5.Add to the flour mixture and fold just enough to blend, do not over mix.

6. Pour the batter into the pans leaving about 20% space on top for it to rise.

7. Bake until golden brown and a skewer comes out clean when inserted into the middle, about 10 minutes for mini-muffins that are about 2 TBS of batter each (makes about 24), 17 minutes for mini-bundt cakes that are about 1/2 Cup of batter each.

8. As soon as your pans come out of the oven place dark semi-sweet chocolate chips in place on the top, when they sweat and are melting, easily blend the chips into frosting by swirling them with the back of a spoon or a butter knife.
Can be frozen without blending the chocolate chips until they come out of a microwave in :30 seconds.
