    I have observed that over the course of trying to eliminate all gluten and dairy and sugars from the diet of my teens, one plagued with headaches and diagnosed with an allergy to dairy and the other with IBS and told by his medical staff that he eliminate gluten from his diet, that the process was overwhelming. The more labels we read the more confused we were.
    My friend suggested that I join this website, the shopping lists were well worth the price of membership. The information in the blogs and newsletters have really helped us sort out the complexity of this dietary change.
    The change in our children was immediate, and following the nutritional chart of daily needs has changed all of our way of thinking about the next meal.
    We will continue to be devoted members to keep the information coming! Thank you Elaine Good Cook-E!

    Narcisa, I am opened to a blog discussion of how the internet and social media is effecting everyone's dietary lifestyle.

    I cook for major food clients that were running food tastings and test for their ad campaigns at a focus group facility and began offering them gluten free and then gluten and dairy free dishes that I developed, laid out on a buffet along side of more traditional foods, and the 'special' dish was ALWAYS the one that they asked for the recipe. Not only were they surprised when told that they were free from gluten and dairy, initially they asked was gluten was. 

    My exposing these major food producers to the concept of gluten free in the real world, I hope that I helped in making this un-'trend' a point for development as well as discussion. 

    I took it to the internet to help those that felt alone, isolated and separated and lost in what to do. The fact that it has made the broadcast media on board, be it a SNL sketch or a note in the Huffington Post, has made the situation not only tolerable but taken seriously. 

    We're not quite ready for talking head live feed yet, but I certainly hope to be in the next year. In the mean time, please feel free to be a talking keyboard discussion, it's more opened to everyones contribution, which is what I like about it.
