    I'm being interviewed at 7:30 EST by Joe Malone and Steve Sweeney on WATD 95.9 today. I've already been warned about Steve Sweeney who is a comic, I'm sharpening my nails now. 

    I will try to get my message out: that eating glu10, dairy, sugar free is better than eating industrialized food or "It is only a matter of time before the world catches up with me." and that I want to take the mystery out of cooking and show how easy it is to cook. I assume that their position will be "I'd rather not eat" maybe because I remember my attitude when I was first told to eliminate dairy and wheat from my diet. I couldn't think of a thing to eat. And when I get together with chefs and they find out what I'm doing, their shocked response is always: "What does that leave you to work with?" As this website will prove, it leaves me with a lot of real and ethnic foods to work with.

    I have great concern that we could lose the art and tradition of the foods that were part of our families heritage. We are loosing a big part of our heritage in loosing the flavors of the foods that have been in our family for generations. In my own family, the Sicilian recipes were very different from the recipes from the Abruzzi side. The Sicilian recipes reflect the influence of the French, North African, Scandinavian, Italian and Greek history that is part of the Island. The Abruzzi recipes are rich in generations of honing in on hand made Italian delicacies, my grandmother's recipes used tactile references, " add flour until the dough bounces like a babies bottom" was on her recipe for Gnocchi. 

    Can you imagine an Italian meal without Pasta or Tomatoes? Well Pasta was introduced to the Italians after Marco Polo went to China and they were eating mostly rice noodles. Tomatoes were introduced by Columbus to the world, as was corn, sugar cane, chili peppers and potatoes. So what were my peeps eating before the 1400's? That's where my inspiration comes from, pre industrialization. Pre filler, Pre additives, Pre chemicals. That's what you'll find in our recipes, honest flavors dependent on pure simple ingredients.

    Seriously, do we think that Chicken McNuggets should be a big part of our children's childhood memories? Not exactly made with Tender Loving Care. I'm sure glad that they're no part of mine.
